Pauline Bruel, dietitian-nutritionist, reveals her healthy Caesar salad recipe, based on anti-inflammatory and gluten-free ingredients.

What are the main ingredients in Caesar salad?

Caesar salad consists of romaine lettuce, cherry tomatoes, croutons, chicken, shaved Italian cheese (often Parmesan), and a creamy garlic-based vinaigrette dressing.

It is a nutritionally complete salad since it contains proteins, lipids, fibers and carbohydrates.

The risk with Caesar salad is putting too many ingredients in it than necessary and making it a fatty dish. To avoid this pitfall, dietitian-nutritionist Pauline Bruel developed a Caesar salad recipe with anti-inflammatory and gluten-free ingredients.

Start by breading your chicken. To do this, dip your chicken pieces in a bowl containing 60 g of gluten-free flour (mix chickpeas with brown rice) then in another bowl containing 60 g of gluten-free flour, 60 g of cornstarch, 2 teaspoons of paprika, 150 ml of water, salt and pepper. Cook them in a very hot frying pan in which you have previously added a little olive oil.

Then prepare your sauce. In a bowl, pour some sheep’s milk yogurt. Add lemon juice, a little old-fashioned mustard, garlic powder, chives, salt and pepper.

For your croutons, take two slices of your favorite bread (wholemeal or cereal if possible) then toast them in the toaster. Cut the slices into small pieces. In a bowl, mix them with a little olive oil and Provence herbs.

Make pecorino shavings.

All you have to do is dress it on your plate. Place the lettuce leaves. Add the cherry tomatoes, chicken pieces, pecorino and croutons. Finish by covering everything with your creamy sauce.

The Caesar salad recipe comes from the United States. It was created in 1924 by Italian-American chef Caesar Cardini in his restaurant called Caesar’s, in Tijuana, Mexico.

A few years later, Caesar salad became a popular recipe in the United States. Today it is on the menu of many classic and fast-food restaurants, with recipes that vary from one restaurant to another.
