Gluten: what is it?

We hear the term “ gluten » quite often, but what is it exactly? This notion is used to designate a group of proteins belonging to the family of prolamins and glutenins. It is found in wheat, rye and barley.

Gluten is safe for people who do not have celiac disease, wheat allergies, or gluten-related disorders. However, some people are sensitive to it and may develop allergic reactions.

To avoid gluten, it is recommended to:

  • Lire food product labels. Gluten sources are declared on labels;
  • Avoid products for which the list of ingredients is not provided;
  • Favor products that bear the “gluten-free” label.

But don’t worry, it is entirely possible to have a gluten-free diet, quite easily, and without depriving yourself.

Many products consumed by people with gluten intolerance

If you are gluten intolerant, there are dozens of foods you can eat without fear. As :

  • Cereals, seeds, tubers and starchy foods such as corn, rice, soy, potatoes, millet, sesame, quinoa, Jerusalem artichokeschestnuts, sesame…;
  • Dairy products and animal proteins such as fresh or sterilized milk, concentrate, powdered milk but also yogurts, cottage cheeses, meat and poultry, offal, etc.
  • Fresh vegetables and fruits: all! ;
  • THE legumes like peas, dried beans, lentils, split peas, broad beans, chickpeas…
